How to Make Moroccan Ragout
Moroccan Rghaif is one of the most famous traditional pastries in Morocco, known for its deliciousness. It's incredibly appetizing and easy to make with just four simple ingredients: flour, water, salt and oil. The dough is mixed until it forms, then rolled out thinly, sliced vertically, wrapped around the hand and fried. The result is a crispy and delicious pastry that's ready to serve.
Ingredients:
2 cups all-purpose flour
1 cup warm water
Pinch of salt
1 teaspoon sugar
Butter for greasing
Fine semolina for dusting
Steps:
In a bowl, mix together the all-purpose flour, warm water, salt, and sugar.
Let the dough rest for 5 minutes.
Shape the dough into a circle, then take a portion and roll it out thin like phyllo pastry. Brush the dough with butter and sprinkle with a little semolina.
Using a pastry cutter, cut the dough into long, thin strips.
Start by gathering the strips and twisting them into spirals, then roll them into a coil, tuck the end under and let them rest.
Heat a frying pan and cook the crêpes on both sides, turning constantly, until golden brown.
When cooked, easily separate the crispy strands.
